Getting Fresh, With Herbs. This Week: Cilantro

CilantroWhat do you have to say about cilantro? It's Tuesday, so we're talking herbs here at Al Dente. And I don't think that there is an herb around that invites more discussion than this pesky herb. Some people love it. (That would be me.) Some people loathe it. (That would be my husband.) Where do you stand?

I tasted cilantro for the first time in a salsa, and it was a revelation. When my husband tastes cilantro, it tastes like soap. For some people, I've heard, the flavor is even more vile than that. It seems that a whole population is genetically wired to like cilantro while others can't abide by it. I think this is fascinating, but haven't found much more to go on. Do you know anything about the science of cilantro?

I don't grow or cook with cilantro, but I'm delighted if someone serves me a dish with cilantro as an ingredient. What are you cooking up with cilantro?
